This is such an adaptable recipe as long as you have the onion, garlic, wine, cream and salt, you can pretty much put it with whatever you like. This recipe is just how I make it. For example, I serve it with rice, but it is also be delicious with mashed potatoes too.

2 Chicken breast
250ml White wine (you don’t have to use this much)
250ml Cream
2 Peppers
1 Punnet of mushrooms
2 Onions
3 Cloves of garlic
Method:
- Thinly slice the peppers, finely dice the onions and garlic, and quarter the mushrooms
- Place the veg in a big pan on medium heat and leave to reduce and soften
- Wash the rice and put it on to cook
- Cut the chicken into small bitesize pieces
- Once the vegetables have soften add the chicken and cook through (approximately 7 mins)
- Add the white wine, then remove from the heat to add the cream
- Return to the heat and bring it to a simmer
- Season to taste with salt and pepper
- Serve with rice
