This is a vegan recipe which is said to originate from my family during the war to be made with rations. It is a fruity tea loaf which is lovely sliced as is, or sliced with a touch of butter.
I find this tastes the best the day after it has been made.
Ingredients:
- 250ml Black tea made with 1 or 2 teabags
- 175g Dried mixed fruit
- 1dsp Golden syrup (I tend to be generous)
- 225g Self raising flour
- 150g Brown sugar
Method:
- Put Dried mixed fruit in the black tea and allow to soak, preferably overnight but work with the time you have
- Preheat oven to 180C and line a loaf tin (I just use loaf tin liners that you can buy)
- Add the syrup to the tea mixture
- Mix flour and sugar in a bowl
- Mix the tea mixture into the dry mixture
- Pour into the loaf mixture and bake for at least 45 minutes. Check it with a skewer to make sure the middle has cooked
