Caroline’s Bolognese

This may not be the most traditional bolognese recipe, but it is definitely the yummiest I have ever had. This is my boyfriend’s mum’s recipe and it is so delicious I just have to share it!


Ingredients:

500g Mince
1 Onion – finely diced
1 Carrot – grated
2 Garlic cloves – diced or grated
1 Beef stock cube
2 Cans chopped tomatoes
2tbsp Tomato puree
1/2tbsp Muscovado sugar
Tomato ketchup
Italian herbs
400g Pasta

Select a color:

Method:

  1. Fry in a saucepan, onions and mince in a splash of oil until browned
  2. add carrots and garlic and fry for another 2 minutes
  3. Sprinkle the stock cube and some Italian herbs and mix
  4. Add tinned tomatoes, tomato puree, muscovado sugar and a squirt of ketchup (trust me)
  5. Heat until simmering and set to taste
  6. Turn the heat to low and simmer with the lid on for 20 minutes to allow the flavours to mix
  7. Remove saucepan lid and stir for 10-15 minutes
  8. Meanwhile cook your choice of pasta shape
  9. Serve with parmesan if you wish
