This is a family recipe from my mums side. It has been made for many a primary school teacher as a thank you and always goes down well at bake sales and Christmas fetes.


Ingredients:

For the base

  • 12oz Rich tea biscuits / digestives
  • 6oz Block butter
  • 3dsp Caster sugar
  • 3dsp Golden syrup
  • 6dsp Cocoa

For the topping

  • 200g Chocolate minimum (the type of chocolate doesn’t matter)
  • Sprinkles!!

Method:

  1. Bash the biscuits to fine crumbs
  2. Melt all other ingredients together run the microwave or in a saucepan on the hob ( I find it easiest top monitor when in a pan)
  3. Meanwhile, grease a shallow baking tin with butter
  4. Put the bashed biscuits and melted mixture into a bowl and mix thoroughly
  5. Tip the mixture into the greased tin and press down firmly (I use a spatula)
  6. Melt the chocolate in a glass bowl, either in the microwave or Bain-maarie on the hob.
  7. Pour the melted chocolate over the biscuit mixture in the tin and spread to cover the surface
  8. Go crazy adding sprinkles and then refrigerate
  9. Remove from fridge and allow 10 minutes before cutting with a big sharp knife
  10. You can keep it out of the fridge but I think it is yummiest when kept refrigerated
This is a normal div—no torn edges applied.
