This may not be the most traditional bolognese recipe, but it is definitely the yummiest I have ever had. This is my boyfriend’s mum’s recipe and it is so delicious I just have to share it!

500g Mince
1 Onion – finely diced
1 Carrot – grated
2 Garlic cloves – diced or grated
1 Beef stock cube
2 Cans chopped tomatoes
2tbsp Tomato puree
1/2tbsp Muscovado sugar
Tomato ketchup
Italian herbs
400g Pasta
Method:
- Fry in a saucepan, onions and mince in a splash of oil until browned
- add carrots and garlic and fry for another 2 minutes
- Sprinkle the stock cube and some Italian herbs and mix
- Add tinned tomatoes, tomato puree, muscovado sugar and a squirt of ketchup (trust me)
- Heat until simmering and set to taste
- Turn the heat to low and simmer with the lid on for 20 minutes to allow the flavours to mix
- Remove saucepan lid and stir for 10-15 minutes
- Meanwhile cook your choice of pasta shape
- Serve with parmesan if you wish
