This is a family recipe from my mums side. It has been made for many a primary school teacher as a thank you and always goes down well at bake sales and Christmas fetes.
Ingredients:
For the base
- 12oz Rich tea biscuits / digestives
- 6oz Block butter
- 3dsp Caster sugar
- 3dsp Golden syrup
- 6dsp Cocoa
For the topping
- 200g Chocolate minimum (the type of chocolate doesn’t matter)
- Sprinkles!!
Method:
- Bash the biscuits to fine crumbs
- Melt all other ingredients together run the microwave or in a saucepan on the hob ( I find it easiest top monitor when in a pan)
- Meanwhile, grease a shallow baking tin with butter
- Put the bashed biscuits and melted mixture into a bowl and mix thoroughly
- Tip the mixture into the greased tin and press down firmly (I use a spatula)
- Melt the chocolate in a glass bowl, either in the microwave or Bain-maarie on the hob.
- Pour the melted chocolate over the biscuit mixture in the tin and spread to cover the surface
- Go crazy adding sprinkles and then refrigerate
- Remove from fridge and allow 10 minutes before cutting with a big sharp knife
- You can keep it out of the fridge but I think it is yummiest when kept refrigerated
